Whatever happened to that leftover chicken?

Even my mom was asking recently. Well, everything was made into a quesadilla. Buy a pack of flour tortillas at Trader Joe's and you can get rid of any kind of leftovers.

The chicken was shredded up and melted into spicy pepper jack cheese quesadillas. Typical but still nice to eat. I made a trio and was a little more experimental with the other two varieties.

The leftover onion? I caramelized it all over stovetop. Paired that with gouda.

And finally, the bacon jam! I went back to the extra sharp cheddar cheese and added a layer of bacon jam for a sweet/savory quesadilla.
