Bacon jam. A gift from Citizenrobot. Food gifts are genius, aren't they? This is a thing I believe she picked up at a Unique L.A. event immediately after an amazing free sample she had at Jammies' booth. This must have been awhile ago because Citizen no longer eats bacon and hasn't for some time now. That's how long this food product sat in my pantry—confusing me. What do you put this on?
Rather than continue letting it age, I decided to open the jar this weekend and sampled it for myself on bland sesame crackers. Interesting. Sweet. I can taste the apples in it and... clove? More so than the bacon, then I'd get little bits of smoky bacon now and then. It is very good and unlike anything I've had before. And I've had a lot of bacon especially during the bacon craze of the past few years that has only tapered off slightly. I added little slices of extra sharp cheddar. Then I stopped eating the crackers and was spreading it directly onto cheese slices. This is breakfast?
While tasting/snacking, I had an early morning Twitter exchange with Textdrivebys, who suggested: buttermilk biscuits, breakfast sandwiches, turkey club sandwiches. Basically, any sandwiches. In the past, I think it was Roxy who suggested spreading it on burgers. All fine ideas, but not things I often make at home.
While I had the oven on this weekend for the cupcake baking, I made a quick pan of cornbread. I put a little bacon jam on a cooled slice and that seemed to work nicely. A little goes a long way here and I am open to more suggestions. Let me know if you have any :)

Food trends are a bit like memes, they can get pounded into the ground - but then every once in a while, there's a flash of genius!
Want. I also had bacon-flavoured butter in a restaurant this year.
I had some crazy pork fat spread on crusty bread pieces in Paris. I wasn't digging it the same way though.
