Kyoto brewing method.

Seems like whenever I have a spare five or tenner in my wallet, I'm back at Demitasse. 

It's a nice spot to have a relaxing sit-down with a friend. Which makes it a great excuse to pay $4.50 for an iced coffee. You can see in the tray closest, "the Kyoto" is served in a iced sake bottle with a double wall tasting glass. Self-proclaimed "coffee nerd" Roshan makes every effort to keep ice away from his iced coffee. No diluted tastes here. A smooth elixir with a slightly sweet, mellow flavor.

What the what? Sorry its a little tough to make out. They have the 2 machines, dripping down into two carafes each, situated in a window that looks into their kitchen. It's a very slow method that works at the speed of a drippy faucet. Check out Serious Eats for a better photo example and explanation.
