Baked with cheese in a crust. We'll see. I've never made something like this before but after perusing a few food blogs and websites, I was inspired. I especially like the decorative aspect of it. It's still in the oven. Update to come.
UPDATE: Out of the oven
UPDATE: OH NOES! Crust underneath is a little...underdone. Popped onto a pizza screen and back into the oven. Top crust was fine. Note for next time is to maybe prebake the crust somehow? Could stand to have more cheese in there too.
UPDATE: Yeah, if I'm going to keep it in the oven that long, I need to go with a thicker slice on the zucchini. I did paper-thin ones this time around because I wanted to use the mandoline (recent kitchen tool purchase). The zucchini dried out a bit. Reheats will probably be done using the toaster oven. Maybe I need to pick up a tart pan and do it that way?
