Eating some of the cookies I baked last night.
Mediocre at best!
Really doesn't seem worth tracking down specialty flours and expensive chocolate. The texture is fine, but not what I prefer when it comes to cookies. Especially chocolate chip cookies.
Rather, I might have enjoyed cracking open a bag of Chips Ahoy--and that's a little sad.
Perhaps 72 hours was too long to chill. Perhaps I should have let the dough rest longer at room temp before popping it into the oven. I'm disappointed in the recipe. I think I might try the standard Tollhouse recipe next time with a 24 hour chilling. I'm looking for something chewier. They NYT cookie is not chewy at all, at least mine didn't come out that way. The closest thing I can think of is it's like a butter cookie--a very good one and I like those!--but instead of sprinkles, filled with chocolate chips. It might have been the dough handling. I think maybe the stand mixer I used is too small for this job.
